Larisa's original recipe: Tofu with carrots

Okay, don't laugh. Serbs (at least those
that are vegetarians) do eat tofu, which we
call sojin sir (or literally, soy cheese). I
invented this dish back in the early 90's in
Ann Arbor, Michigan, when I used to cook for
my friend Devorah, who was a vegetarian. On
a particularly cold, November day, when the
roads and cars were frozen, I had only three
types of food in my fridge: tofu (firm),
onions and carrots. No potatoes, no cabbage
(Serbs love cabbage), no tomatoes.
So, I invented this delicious recipe which
everybody (except me - cooks don't like
their own dishes - it might be a curse)
likes. Since that wintry evening in Michigan
almost 20 years ago, I have made my tofu
dish regularly. Even my kids (who otherwise
hate tofu) love this dish.
Here is the recipe.

Preparation time 15 minutes. Feeds 2-3 people.
Ingredients:
- 1 whole onion, thinly chopped
- 2-3 carrots, grated
- 1/2lb (or 1 cup) of firm tofu, grated
- 2 tablespoons of olive oil
- 2 cloves garlic, squeezed
- A dash of ginger powder & ground black
pepper
- 1 table spoon of soy sauce

Preparation:
- Chop onion into tiny pieces and sauté in
olive oil for 2 minutes.
- Add grated carrots and continue sautéing for
2-3 more minutes.
- Add tofu and garlic and spices, but not soy
sauce. Saute for additional 4-5 minutes.
- At the end, add soy sauce, stir quickly and
remove from the stove.
Serve with plain steamed rice and steamed green
beans mixed with olive oil, vinegar and garlic
(not shown). The picture on the left shows the
tofu-carrot dish, rice, and deep fried sprouts -
a dinner I cooked just a few days after
Thanksgiving.
